“Every time I hear someone order black coffee, I think, There’s nothing black about this coffee. I wanted to make coffee that was actually black,” says Ockhyeon Byeon, owner of Round K, a Korean-style coffee shop on New York’s Lower East Side. He started experimenting and eventually came up with the Matte Black Latte—an inky blend of almond milk, espresso, and cacao darkened with coconut ash. It was an easy hit—especially on Instagram, where its goth appearance stood out like a giant middle finger in a sea of pastel-hued fairy food; the curmudgeon’s answer to all that mermaid toast and unicorn poop.
